Tea menus
These vary considerably, depending on the type of establishment. The high-class hotel will usually offer a dainty menu. For example: • Sandwiches (smoked salmon, ham, tongue, egg, tomato, cucumber) made with white or brown bread. • Bread and butter (white, brown, fruit loaf). • Scones with clotted cream (see Plate 103, page 259). • Jams, honey, lemon curd. • Small pastries, assorted gateaux. • Fruit salad and cream, ices. • Tea (Indian, China, Russian, iced, fruit, herb). The commercial hotels, public restaurants and canteens will offer simple snacks, cooked meals and high teas. For example: • Assorted sandwiches. • Buttered buns, scones, tea cakes, Scotch pancakes, waffles, sausage rolls, assorted bread and butter, various jams, toasted tea-cakes, scones, crumpets, buns. • Eggs (boiled, poached, fried, omelets). • Fried fish; grilled meats; roast poultry. • Cold meats and salads. • Assorted pastries; gateaux. • Various ices, coupes, sundaes. • Tea; orange and lemon squash
