The family in Britain is changing. The once typical British family headed by two parents has undergone substantial changes during the twentieth century. In particular there has been a rise in the number of single-person households, which increased from 18 to 29 per cent of all households between 1971 and 2002. By the year 2020, it is estimated that there will be more single people than married people. Fifty years ago this would have been socially unacceptable in Britain. In the past, people got married and stayed married. Divorce was very difficult, expensive and took a long time. Today, people's views on marriage are changing. Many couples, mostly in their twenties or thirties, live together (cohabit) without getting married. Only about 60% of these couples will eventually get married. In the past, people married before they had children, but now about 40% of children in Britain are born to unmarried (cohabiting) parents. In 2000, around a quarter of unmarried people between the ages of 16 and 59 were cohabiting in Great Britain. Cohabiting couples are also starting families without first being married. Before 1960 this was very unusual, but in 2001 around 23 per cent of births in the UK were to cohabiting couples. People are generally getting married at a later age now and many women do not want to have children immediately. They prefer to concentrate on their jobs and put off having a baby until late thirties. The number of single-parent families is increasing. This is mainly due to more marriages ending in divorce, but some women are also choosing to have children as lone parents without being married. 200g (7 oz) shortcrust pastry 225g (8 oz) sausage meat plain flour milk, to glaze.
Directions 1. Roll the pastry out thinly into a rectangle, then cut it lengthwise into 2 strips. 2. Divide the sausage meat into 2 pieces, dust with flour and form into 2 rolls the length of the pastry. 3. Lay a roll of sausage meat down the centre of each strip, brush down the edges of the pastry with a little milk, fold one side of the pastry over the sausage meat and press the two edges firmly together. Seal the long edges together by flaking. 4. Brush the length of the two rolls with milk, then cut each into slices 4 cm (1 inch) to 5 cm (2 inches) long. 5.Place on a baking sheet and bake in a moderately hot oven (200°C / 400°F / Gas 6) for 15 minutes; to cook the meat thoroughly, reduce the temperature to moderate (180°C / 350°F / Gas 4) and cook for a further 15 minutes. 6. Cover and brown the top of the dish under a hot grill. 7. Serve straight from the pan. What You Need 1cup boiling water 1cup dried cranberries 4cups flour 1/2 cup sugar 3Tbsp. CALUMET Baking Powder 3/4 cup cold butter or margarine 1cup PLANTERS Walnuts, toasted, chopped 1cup ATHENOS Greek Strained Nonfat Yogurt 1cup whipping cream1 egg, lightly beaten Make It HEAT oven to 350°F. ADD water to cranberries; stir. Let stand 10 min. Meanwhile, mix flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add nuts and drained cranberries; mix well. Add yogurt and cream; stir just until dry ingredients are moistened. DIVIDE dough into 3 pieces. Pat each piece into 6-inch round on floured surface; cut each into 8 wedges. Place wedges, 2 inches apart, on ungreased baking sheets; brush with egg. BAKE 15 to 18 min. or until lightly browned. Serve warm.
